Introduction to Seeds

Seeds are ripened plant ovules, which means that they are essentially fertilized plant “eggs”. Many plant seeds are edible seeds. They are also the source of many cooking oils and spices. Seeds contain plenty of minerals and protein as well as antioxidants that can keep your heart healthy and fight off diseases ranging from colds to cancer. Many of the healthy compounds in seeds are the same compounds that are found in Nuts.

Seeds are a great source of fiber, polyunsaturated fatty acids (PUFA’s) and Vitamin E. They are a very large category that includes cereals, Legumes and certain nuts. This section focuses on some of the edible seeds we commonly eat.
